Lay out the crackers on a serving platter or tray. In a small bowl, mix the cream cheese with finely chopped fresh dill. Add salt and pepper to taste, if desired. Spread about 1 teaspoon of the cream cheese mixture onto each cracker. Take a slice of smoked salmon and fold or roll it into a neat shape. Place the rolled smoked salmon on top of the cream cheese layer on each cracker. If you're using caviar, spoon about ¼ teaspoon onto each smoked salmon roll. Garnish each canapé with a small sprig of fresh dill. Serve the smoked salmon canapés immediately, arranged on a platter. You can also provide lemon wedges on the side for guests to squeeze over the canapés if they desire an extra citrus flavor.
