Instructions: Air fry whole sweet potatoes at 400°F for 45 min, brushing with olive oil. With 10 min left, add tomatillos, poblano, serranos, garlic & onion to roast. Blend roasted veggies with cilantro, lime juice & salt for salsa. Cook @schweidandsons ground beef over medium heat for 5-7 min, add taco seasoning & cook 2-3 more min. Slice open sweet potatoes, stuff with seasoned beef, then top with avocado, salsa, sour cream, mozzarella & cilantro.
